Guiltless Chocolate Mousse Pie
3-4 Healthy Chocolate Cookies, 1 tbsp. butter, 6 Healthy Chocolate Nuggets, 12 ox. extra firm tofu, 1 pinch sugar substitute, 3 tbsp. agave nectar or honey.
Crumble Healthy Chocolate Cookies into a pie pan and press out to form pie crust. In double boiler heat the butter and Healthy Chocolate Nuggets on low heat until melted. In blender or food processor, combine tofu, sugar substitute, agave nectar, and melted Healthy Chocolate Nuggets. Blend until creamy and smooth, about 2 minutes. Pour over Healthy Chocolate Cookie crust. Refrigerate until firm, about 1 hour. Crumble remaining Healthy Chocolate Cookie to sprinkle on top.
